Speedrunning Marshmallows

My parents were out of the house for approximately 45 minutes, so, of course, I made marshmallows. It was only a few days until St. Nicholas day, and I was determined to present them with some dessert or another. Also just because there is a certain thrill which comes with trying to cook or bake something without others knowing.

I did the classic sugar and corn syrup marshmallows because, although less healthy,they have the correct texture and flavor. As for flavor, I used a little vanilla extract and some peppermint extract.

When the marshmallows were done whipping up, I split the batter apart and mixed a little red food coloring into one half. The two batters were then swirled together in a pan and left for about four hours. During this time I smashed some candy canes in a plastic bag.

Once four hours had passed and it was drawing on ten o’clock at night, I started the next step. Cut the marshmallows into big squares, melt dark chocolate, and start dipping the squares in the chocolate. Some of the squares were completely dipped, others only partially. After dipping them in the chocolate and while it was still wet, I added the crushed candy canes on top.

Then I set the marshmallows aside for the night. After the marshmallows were dry I stored them in a plastic container until St. Nicholas day.

The chocolate cups in the picture are cocoa bombs I also made, however, I forgot to pay attention and document the process. The shape was made using dixi cups, and then I filled with cocoa mix and topped with chocolate and marshmallows.
